Spaghetti Squash with Feta and Herbs
serves 4
Ingredients
- 1 ea spaghetti squash, halved, seeded
- 1 t dried oregano
- 1 T olive oil
- 1/4 t garlic powder
- 1 T fresh parsley, chopped
- 1 T fresh basil, chopped
- 1 lemon, zest and juice
- 1/3 C feta cheese
- Option: 2 T pine nuts, toasted
Instructions
- Season the squash with salt, pepper, and oregano, then roast at 400 until tender.
- Scrape the squash into a bowl, then toss with the remaining ingredients.
- Plate and serve hot.
